Rules

Competition - CHEFS

  • The jury will evaluate the best team, which will win the grand prize of 10,000 BGN. Each interested team must submit a preliminary online application for participation at our website www.biorestcup.com.
    Only approved applications will be admitted to the forum.
    The competition is team-based, with each team consisting of 3 people.

    1. Warm or cold vegetarian appetizer with the main ingredient - Beetroot and mandatory products "Vegetable gelatin Sosa", "Kudzu Sosa".
    2. Main course - protein of choice with mandatory product "Beef sweetbread" and minimum 2 side dishes and sauce with mandatory product "Gracila Gel Sosa" and choice between "Gelcrem Cold" and "Gelcrem Hot".

    3. Dessert - with citrus and chocolate as the main ingredients. Individually presented on a plate with decoration. with mandatory product - "Potatowhip Cold Sosa"

    The jury will pay special attention to zero food waste practices, as well as to preparing dishes in the spirit of a healthier lifestyle.

    IMPORTANT:
    There should be no more than 3 textures on the plate.

Competition - PASTRY CHEFS

  • The jury will evaluate the best team, which will win the grand prize of 10,000 leva. Each interested team needs to submit a preliminary online application for participation on our website www.biorestcup.com.
    Only approved applications will be admitted to the forum.
    The competition is team-based, with each team consisting of 2 people. 


    1. Petit Fours - 2 types (chocolate candies and petit fours). Maximum of 25g each. They must contain a chosen fruit and use a product from the Sosa Ingredients series. Mandatory product - Indrishe. 12 pieces per type, with 6 for tasting and the remaining 6 for presentation.

    2. Chocolate sculpture. All elements can be brought ready-made and assembled on site. It is mandatory that each ready-made element is not pre-assembled with another. Everything must be brought in its constituent parts but assembled on site - during the competition.

    3. Entremet cake - 1kg. 8-10 portions or 100-120g per piece. You must make two cakes - one for tasting by the jury and one for presentation.
